Red Velvet Ice Cream Muffins
Dreams of more ice cream muffins have been dancing around in my head ever since I posted my Caramel Pecan Ice Cream Muffins. I’m a big red velvet cake fan and when I saw Ben & Jerry’s Red Velvet Cake Ice Cream, it immediately went into my grocery cart. This ice cream has been sitting in my freezer just waiting for this recipe and I resisted the urge to open it until now…my word, this is good stuff! Since Valentine’s Day is upon us, I figured there was no time like the present to make these muffins. They came out a pretty pink color and I almost called them “Pink” Velvet Ice Cream Muffins, but Red Velvet won out in the end as that’s what they really are. Of course, you have to add the cream cheese glaze to make this a true southern red velvet recipe…yummm!
These muffins are so easy to make that there’s no excuse not to make a batch today. Bake away my friends! A special note…you may need to buy 2 pints of ice cream – one to use in the muffins and one to eat straight up!
Yield: 9 muffins
Ingredients
- 1 pint (2 cups) Red Velvet Cake Ice Cream (Ben & Jerry’s), softened
- 1 1/2 cups self-rising flour
- 1/2 teaspoon vanilla
- 1/4 cup soft cream cheese
- 2/3 cup powdered sugar
- 1/2 teaspoon vanilla
- 4 to 5 teaspoons milk
Directions
- Preheat oven to 375 degrees F. Spray bottoms only of 9 regular-size muffin cups.
- In large bowl, combine ice cream, flour and vanilla; stir just until flour is moistened. Spoon batter into prepared muffins cups, filling each two-thirds full.
- Bake for 15 to 20 minutes or until toothpick inserted in center comes out clean. Cool muffins in pan on wire rack for 10 minutes. Remove from muffin cups.
- In medium bowl, blend cream cheese and powdered sugar together with wire whisk until well blended. Add vanilla and enough milk for drizzling consistency. Drizzle over warm muffins. Serve warm. Refrigerate any leftover muffins.
