Refreshing 3-ingredient fruity ice pops to beat the heat.
We’ve had EXTREMELY hot temps here lately. I’m talking over 100 degrees y’all! Add the humidity in with that and this girl is happy as can be staying inside in the air conditioning.
You know, sometimes only a frozen treat will do to help you cool off during the summer. Did you grow up running to the ice cream truck for a popsicle….or better yet, have homemade popsicles at home that were just frozen Kool-Aid? I even had the old Tupperware popsicle molds….my hubby says his mom poured Welch’s grape juice in them. What a treat!
With watermelon in the fridge and a popsicle set I’d never used, I figured it was about time to put both to use by making my own popsicles. When I started wondering what I could add to the fresh fruit to kick it up a notch, I remembered a bottle of black cherry juice I’d been saving to make some kind of beverage. Sounded like a pretty good combination to me. Success! These popsicles turned out so good….perfect for those hot summer days!
Give these Black Cherry Watermelon Popsicles a whirl and let me know what you think.
Yield: 5 popsicles (yield may vary depending on popsicle molds)
- 2 cups cubed seedless watermelon
- 8 ounces (1 cup) black cherry juice*
- 3 tablespoons powdered sugar
- Put all ingredients in blender and process until smooth.
- Pour into popsicle molds and freeze for 3 hours.
- Remove from molds and enjoy.
*I used an 8-ounce bottle of R.W. Knudsen Just Black Cherry Juice in this recipe.
This recipe makes just over 2 1/2 cups. I filled 5 popsicle molds and had a little left over, which I put in a cup to drink (awesome as a beverage too).
