
Today is a special day. My blogging friend Katie and her husband are expecting a baby boy next month and we (her blogging friends) are celebrating by throwing a surprise virtual baby shower. Surprise Katie! Did we do a good job of keeping it a secret? I can’t wait to meet your precious new bundle of joy!
Katie and I met at the first Food Blog Forum Orlando conference 3 years ago and have been friends ever since. In my eyes, Katie is a super blogger with two active blogs. Katie’s Cucina is her food blog and she teams up with her husband, Jon, for their Sew Woodsy DIY blog. I don’t know how she does it…I barely have enough time for one blog, much less two!

I’m bringing these Coconut Cookie Butter Sandwich Cookies to the shower. With only 3 ingredients, these cookies are a cinch to make and are ready in no time flat. These will be a great timesaver when Katie’s sweet tooth kicks in and she only has baby J’s naptime moments to get in the kitchen. Along with being easy to make, these cookies are so good you’ll find it hard to eat just one. As soon as I took my first bite, I knew I’d be making them again and again, especially after hubby labeled them “AWESOME.” That’s really saying something since he’s a die-hard chocoholic! These cookies and crunchy cookie butter from Trader Joe’s used in my recipe are amazing (there are 2 packs of cookies in the box). I can’t wait for our TJ’s to open this summer. No more long trips to stock up…just a 15 minute ride for me!

I went to Katie’s baby shower in town last month. Here’s the mom-to-be grabbing a cookie. Jon was just finishing decorating when I arrived and snapped this picture…he looks like he’s dancing on the table! We all had a chance to make a onesie for the baby from the Cricut vinyl iron-on bar Katie had set up.
Coconut Cookie Butter Sandwich Cookies
Yield: 24 cookies
Ingredients
- 48 Toasted Coconut Cookie Thins (Trader Joe’s)
- 1 cup Speculoos Crunchy Cookie Butter (Trader Joe’s)
- 20 ounces vanilla almond bark candy coating
Directions
- Line large baking pan with wax paper.
- On the bottom side of 24 cookies, spread about a teaspoonful of cookie butter . Top each with another cookie (bottom side next to cookie butter) and press down lightly.
- Place candy coating in large microwave-safe bowl and melt in microwave following directions on package. One cookie sandwich at a time, place in melted candy. Move cookie around slightly to make sure bottom is covered. Carefully spoon candy coating on cookie to cover completely. Lift out with fork and gently tap fork on side of bowl to remove excess candy. Place on wax paper lined pan. Repeat with all cookies.
- Place pan in refrigerator for about 15 minutes to set.
Notes
You can use less or more cookie butter depending on your preference. I used a regular table teaspoonful.
